Ready, Set, Go! And Pesto

Cora has a favorite game.  She stands at the top of the hill that joins our neighbors yard.  Goes right up to the neighbors fence says “Ready, set, GO!!!!” and runs down the hill.  Sometimes I run with her.  Justin captured us playing this game on Saturday.

Yesterday I was craving pesto.  I made my monthly trip to Costco with plans to buy their big bag of pine nuts…until I saw they were $25.00!  Even though it was a fairly large bag…it was not big enough to justify that money.  I headed to Ingles and bought a tiny bag of pine nuts for $9.  Yep, $9 for a snack size amount.  I used half pine nuts and half walnuts and it was the best pesto I have ever made!

Pesto is so easy to make.  You simply need:

2 C fresh basil leaves, 1/2 C freshly grated parmesan cheese (I had to us a little powdered as well), 1/2 C olive oil, 1/3 C pine nuts (or walnuts..or both!), 3 garlic cloves, salt and pepper to taste.

Blend the basil and nuts.  If using walnuts blend first before adding basil. And then I just add the rest…and toss in with the pasta (and chicken if you want some meat).  A delicious meal but unfortunately the taste and smell linger on your breath for a while…But it’s worth it.

I also made bean salad.  We both love bean salad.

I don’t exactly have a recipe. I often use whatever I have.  Yesterday’s salad was black beans (drained and rinsed), kidney beans (drained and rinsed), frozen corn, yellow bell pepper, and red onion mixed with balsamic vinegar, olive oil, salt, pepper and cumin.

Today’s plans are to finish cleaning my house.  Laundry is done but bathroom needs to be cleaned, kitchen needs to be cleaned…floors need to be mopped.  Ironing also is waiting for me.  After reading your comments I was comforted to realize I am not alone.  I also no know that I must buy wrinkle free everything.  I had no idea there was such a thing as wrinkle free pants!  Thank you all for your suggestions and sympathy…:) Happy Tuesday!

    I am definitely going to make that bean salad, it sounds like it would be wonderful with grilled food. I can’t wait for my bell peppers to grow bigger, right now they’re about the size of peas. 😉 Very cute picture of you and your girl!

  6. Looks great. Walnut and pine-nut pesto would basically kill Anna, so make sure to never serve it to her. Lat time she encountered pesto, she looked like she had had a lip augmentation, because her lips swelled to huge proportions. So, I have sort of a distant relationship with the stuff, now.
