Our Happy 4th and Thoughts on Food

Hope you all had a wonderful long weekend!  I know we sure did.  We spent it with both of our families…and had time alone with our little family of three.  I think the most celebratory thing that happened to me was I found rhubarb at our local grocery store!

All summer long I have been tormented by food blogs with beautiful pictures of rhubarb pie, rhubarb cakes, rhubarb tarts…and then one of my dear friends (from the North) told me her mother was bringing her a bunch of rhubarb during her next visit.  I found myself slightly envious. Saturday my rhubarb fixation was fulfilled when I made a strawberry rhubarb pie…my very favorite fruit pie.  It was good…so very good.

I have enough rhubarb to make another pie but can also make muffins…hmm, a tough choice.

We really have no pictures from our weekend but one.  I took this lone picture at Cracker Barrel.  (I am noticing a pattern of all pictures having something to do with food…can you tell I’m pregnant?) Saturday morning while on our run we passed a guy carrying a to go Cracker Barrel cup.  From that moment on Justin was determined we were going to go there for breakfast.  I kindly offered to scramble eggs at home but my offer was turned down. I tend to be somewhat of a health nut and sometimes my poor husband can no longer stand it. I am convinced that as much as I need the occasional dose of sugar…my husband needs grease. I don’t know how to make chicken fried chicken, I don’t make biscuits…we never have bacon or sausage.  Guess I can understand why he passed on my offer.  So here is a picture of my good old American baby…stuffing her face (on july 4th) with a greasy biscuit.

For the first time I did not enjoy my Cracker Barrel experience.  I always order the same thing…(used to be blueberry pancakes with there real maple syrup) then it became the wholesome morning sampler.  This time they had no yogurt so I ordered the “eggs in a basket.” And they had used….spray butter. Or some sort of greasy supplement on their toast.  All I know that it was not butter. Thinking about it now makes me sick…My poor husband.  I am that person (although I try not to be) who can ruin a meal by my ongoing commentary on the strange tastes I notice.  It has become far worse with pregnancy.  Anyways…

The 4th we spent with Justin’s parents and then we headed to his sisters house.  She and her husband had a cookout.  Great food and lots of fun.  We didn’t stay for the fireworks as Cora had decided to nap for only an hour that day.  Needless to say she fell asleep as soon as we laid her in bed.

One more recipe I need to share before I sign off.  Jessica over at gracefulbaking had a recipe I knew I would love so I bookmarked if an finally had the ingredients to make it.  Sure enough it was delicious.  I supplemented the ground chicken with turkey but otherwise I followed her directions exactly.  Very healthy and very delicious…also got Justin’s approval.

    Oh yum. Right now we are in love with turkey and feta. Cora looks so much like Justin in those pictures of her in the yard. So glad you had a great fourth weekend. Thank you again for the gift card, I will call you at the end of this week, I hope you are doing well!

    I have never had rhubarb, how wrong is that? Maybe you’ll share your pie recipe? My littles only took 1 hr naps on the 4th as well, and were both sacked out by their bedtimes! Thankfully not even the neighbors (very unneighborly) popping of fireworks until late hours didn’t wake them up.

    My hubby LOVES Cracker Barrel! That is one of his favorite breakfast spots. I am not a fan of eating breakfast out…

    I had to laugh about your Fourth of July breakfast. We never eat breakfast out but that is exactly what we did… went to Cracker Barrel. And Christian ate a biscuit (and eggs, and a little of everything else), and I ordered the wholesome breakfast sampler. Too funny.

    I don’t love going out for breakfast, the grease always makes me feel sick to my stomach! the recipe sounds wonderful and I’m going to try it next week. Glad you had a nice weekend!

    :) proof that you’ve never cooked bacon is that you spelled it wrong and clearly never blog about it. ha! I’m with you on the health-nuttiness! My poor hubby just wants a cookie made with regular white flour, milk choc chips, shortening & butter sometimes. Bless him. They’ll live longer due to our healtiness (and God’s providence)
